Polignano a Mare

Domenico Modugno was born here in 1928, and "Volare" became the town's subtitle: his open-armed statue faces the sea from which the village rises vertically. White houses stand on the lip of a cliff riddled with caves; below, the Lama Monachile cove, framed by a Bourbon-era bridge, is among Italy's most photographed beaches.

From the old town's terraces the rest explains itself: cobalt water, cliff divers — the world high-diving circuit stops here — and gelaterie to close the evening. One tip: Polignano's "caffè speciale", with cream, lemon peel and amaretto.
