Sbrisolona crumbly almond and cornmeal cake, broken by hand
White and yellow flour, almonds, butter and sugar, broken by hand: sbrisolona is Mantova's cake, already served at the Gonzaga court.
Read more →Borgocarbonara is one of the youngest comuni in Italy: it was born on the first of January 2019 from the merger of Borgofranco sul Po and Carbonara di Po, after the referendum of 11 February 2018 in which almost ninety per cent of those who voted said yes and chose the name as well. It is a return rather than a novelty: in the days of the Duchy of Mantua neither of the two was a comune, Carbonara being a hamlet of Sermide and Borgofranco one of Revere, from which it was detached only in 1816 by the Austrians of the Lombardo-Venetian Kingdom.
The name says the rest: «franco» because the land was free of tolls, sitting on the border between Mantua and Rovigo. Today the border is the embankment of the Po, and on the embankment the white truffle grows by itself, with nobody sowing it: the truffle grounds here are centuries old, there is a museum devoted to the truffle and, since 1995, a national fair. The rest is the dish of the house, the turtèl sguasaròt.
