At Ambrosan the remains of a Roman villa have been found and, beside them, the ruins of what is supposed to have been a building for drying agricultural produce: typically grapes, to make passito wines. This is the Valpolicella, and that ruin is probably the oldest ancestor of what is still made here. Before the Romans the territory was inhabited by the Arusnates, a people probably of Etruscan origin who settled here from the fifth century BC: their inscriptions can be read today in Verona, at the Museo lapidario maffeiano.

The Romanesque pieve of San Floriano is named as early as 905, though the building one sees is of the twelfth century, and it was raised over a pagan place of worship, reusing its stones: in front of the main entrance stand two large Roman funerary cippi and other marble remains, which ended up there as building material and have stayed in plain sight. The comune's name, on the other hand, remains uncertain: «Cariano» would come from the late Latin Carilianus, the land of a Carilius; but some derive it instead from Castrum Rotharii Ruptum, that is from the castle of Castelrotto — of Lombard origin, head of a sculdascia, and destroyed in 1404.
