Every Shrove Tuesday the riders of Palo del Colle send their horses galloping down the main street to strike the "viccio", a target hung from a rope — once a live turkey — that gives the Palio its name: a breakneck race the town has handed down for centuries, without equal in Puglia.
The rest of the year this hilltop town of 21,555, fifteen kilometres inland from Bari, follows the rhythm of olive growing. In the old centre, the clock tower and whitewashed courtyards recall the "Terra di Palo" of the ancient records.
