Bistecca alla Fiorentina T-bone cut of Chianina beef, grilled rare over embers
A T-bone cut from Chianina beef, grilled rare over embers with no seasoning at all: Florence's signature dish.
Read more →The busiest place in this province is not its capital. It is Montecatini Terme, a spa town with about a fifth of Pistoia's population, and it pulls more visitors than anywhere else here. Around it lies a landlocked province, ninth of Tuscany's ten by land area and sixth by population, held together by only twenty municipalities. Two of them carry Terme, the Italian word for thermal baths, in their names: Montecatini and Monsummano.
Montecatini's churches repay more attention than a spa town usually gets, starting with the basilica of Santa Maria Assunta and the church of Santi Jacopo e Filippo. Pistoia, the provincial seat and largest city, deserves a full day rather than a stop on the way through. After that, Pescia, Quarrata and Monsummano Terme sit close enough to string together without much driving.
