The patron saint of Castel Giorgio is Saint Pancras, celebrated on 12 May, in the church dedicated to him. The patronal feast is tied to the ancient May Tree tradition: on the afternoon of 11 May, the «arzata» is raised, a wooden pole about twenty metres tall stripped of its bark, while the following day, the patron's own feast day, after the procession, people climb the pole to win the gifts placed at its top and a prize in coins.
The May Tree tradition in Castel Giorgio dates back to the 17th century and is linked, like similar tree traditions found elsewhere in Italy, to seasonal rites of passage: the town library has published a more thorough account of it in a dedicated booklet, «La festa del maggio».
