The patron saint of Palazzo San Gervasio is Saint Anthony of Padua, celebrated on 13 June. The town became a fief during the reign of Joan I of Naples, and its territory was called the «Tenimento di Palazzo San Gervasio con il Castello»: the marquisal castle, known as «Palatium Regium», indeed dates from the Norman period, but its refitting was almost certainly carried out under a design by Frederick II, who besides being a great commander and a shrewd politician, was also a skilled engineer.
The town preserves the memory of its history in the «Camillo D'Errico» picture gallery and at the local archaeological site; in 1963, between Palazzo San Gervasio and nearby Minervino Murge, the film I basilischi was shot, directed by Lina Wertmüller, which won the Silver Sail at that year's Locarno Festival. Among the traditional Easter sweets are the «scarcegghjə», with a boiled egg, and the «laghənə chə məgghieichə», lagane pasta with breadcrumbs.
