Settingiano

Province: Catanzaro · Region: Calabria · Population: 2,955 · Postal code: 88040

Settingiano is the sequel to a village that ended: it was founded at the end of the sixteenth century by the people of Rocca Falluca, a medieval settlement of which only ruins remain, on the boundary between the territories of Tiriolo and Settingiano. The original nucleus stands on the slope of a very steep hill, on the isthmus of Catanzaro — the point where the Italian peninsula is at its narrowest — on the eastern side of the saddle of Marcellinara. In the last twenty years the village has grown above all towards Martelletto, which is now its productive centre.

The oldest thing the village keeps is a soup. It is called minesthra di Sammartinu and is reckoned the oldest recipe known here, older than the arrival of pasta: vegetables — wild fennel, savoy cabbage, white cabbage, chard — and pork, oil and salt to taste, served with home-made bread and new wine on the eleventh of November, the feast of San Martino, the patron saint. After that day comes instead the pasta alla settingianisa, filled with minced veal and baked in the oven. And there is the sanguinazzu, pig's blood with walnuts, cooked wine, grape mustard and cloves, to be spread on bread: hard to make, because it has to be stirred without ever stopping.
