Castelpoto

Province: Benevento · Region: Campania · Population: 1,326 · Postal code: 82030

At Castelpoto, for centuries, bread was the pittulo: a flatbread of maize flour, because on this clay hill wheat did not pay. It was cooked on a flat stone made red-hot on the embers: the batter stuck to it, then the stone was raised almost upright towards the flame and kept turning until a crust formed. It is eaten hot, and on the eighth of February, for Saint Laureatus.

The other thing made by hand here is the red sausage. The chillies are threaded on needle and thread into necklaces, dried in the shade, toasted in an oven fired with olive and oak wood and ground to powder; then they go into the meat. Since 2007 there has been a consortium of five producers. The village also has a monument to the valani, the boys who minded the herds.
