Altamura bread, baked in wood-fired ovens from twice-milled durum semolina, was the first in Europe to earn DOP protection: the scent of its historic bakeries guides a visit better than any map. On the square, the cathedral Frederick II founded in 1232 — the only church he established in Puglia — displays a rose window and carved portal among the region's richest.
