Saint George is Sambuca's co-patron, credited by tradition with blessing the fields and every family in town. On 23 April, after the afternoon mass, his image is carried in procession through the streets of the quarter, with the whole neighbourhood turning out.
What sets this feast apart is the zabbinata: the local cheesemakers offer everyone «zabbina», ricotta fresh off the fire and still warm, eaten with bread. It is a nod to the shepherding tradition of these hills, home to Vastedda della Valle del Belìce DOP, one of the very few stretched-curd sheep's cheeses anywhere.
