Caderzone Terme

Province: Trento · Region: Trentino-South Tyrol · Population: 669 · Postal code: 38080

The people of Caderzone spent the winter in the Mantua country, and from there they brought back the way of making cured meats: they adapted it, putting in plenty of garlic. Today the cacciatore, the pancetta, the salame and the salamella with garlic of Caderzone are recognised products, and men from here worked as pork butchers in Trieste and Mantua too.

In the middle of the village stands the spa, fed by an iron-rich spring they call acqua forte, strong water. In the Lodron Bertelli palace is the museum of the mountain dairy, with the tools of the herdsmen and cheesemakers. On the first weekend of August comes the farming feast, with the Rendena cows on parade and, on Sunday evening, a bonfire. From 1928 to 1947 the comune was inside Strembo.
