The patron saint of Carovilli is Saint Stephen of the Wolf, celebrated on 19 July. Among the town's most cherished traditions is the Tresca, a historical reenactment of the old wheat threshing with horses, held on the third Sunday of August; the first week of September instead brings a fair dedicated to the saint of the same name. On 31 August and 1 September Saint Dominic is celebrated with the distinctive «barracca», while on 26 December, in the locality of Fonte Curelli, a living nativity scene is set up.
The town preserves traces of its history in the church of Santa Maria Assunta, in that of San Domenico and San Nicola, in the Castello di Carovilli, and in the archaeological area of Monte Ferrante.
