In the heart of Acqui the Bollente has always boiled: sulphurous water at 74.5 degrees gushing beneath the octagonal aedicule of 1870, around which Roman Aquae Statiellae built its fortune. The arches of the Roman aqueduct, among the North's best preserved, still march through the countryside across the river.

The baths and famous muds continue the tradition; in the cathedral, Bermejo's Madonna of Montserrat triptych is an unexpected Spanish masterpiece in the Monferrato. Sweet Brachetto and the local wines complete a spa town with substance to spare.
