Bra is the world capital of an idea: Slow Food was born here, the movement that taught the planet to defend local cuisines. Bra sausage is eaten raw by ancient royal privilege — the only one in Italy — and Langhe cheeses crowd the shops of the centre.
Every two years, in September, the "Cheese" biennial turns the town into the world's greatest festival of raw-milk cheeses. In the years between, the daily rite remains: tajarin pasta, braised beef and a glass of Nebbiolo from genuinely local hills.
