The gnostre are Noci's secret: blind courtyards opening off the old-town lanes like open-air rooms, once shared living spaces, now stages for festivity. In November "Bacco nelle gnostre" fills them with new wine, roast chestnuts and brass bands: the moment when this town of the trulli Murgia — 19,285 residents between Gioia del Colle and Alberobello — shows its character.
The whitewashed historic centre, dense as a honeycomb, takes an hour of continuous curiosity, between narrow chiassi alleys and the fourteenth-century mother church. The area's dairies, with their farmstead cheeses, complete the stop the proper Apulian way: at the table.
