In summer, at Pollina, they cut the trunks of the ash trees with a knife: a liquid runs out, dries in the air and becomes manna, the same the Greek and Roman doctors called honey of dew. It is the only place in the Mediterranean where the knack survives.
The town is in the Madonie, above the sea, and two thirds of its people live down at Finale, the hamlet on the coast. In the castle tower, between 1548 and 1550, Francesco Maurolico watched the stars; just below, since 1979, there is an open-air theatre cut into a dolomitic rock half white and half pink, which is why it is called Pietrarosa. There are 2,998 residents.
