Tagliatelle al Ragù egg tagliatelle with meat ragù, soffritto and tomato
Ribbons of egg pasta, meat ragù and soffritto: the real bolognese has had a recipe deposited at the Chamber of Commerce since 1982.
Read more →No other province in Emilia-Romagna has as much protected land as Ferrara: roughly 40,000 hectares of reserves and nature areas, more than fifteen per cent of its surface. Rivers do most of the boundary work here — the Po separates it from the Veneto and Lombardy to the north, the Reno marks the line with Bologna and Ravenna to the south — and the Adriatic closes it off in the east. There are 21 municipalities and just over 350,000 people, more than a third of them in the city of Ferrara itself.
The Castello Estense still stands in the middle of Ferrara with water in its moat, and it is the main reason to stop in the city. Comacchio, out on the lagoon, feels like a different province altogether; Argenta and Bondeno sit on the Reno and the Po; Cento, the second-largest town, is close enough to Modena and Bologna to look their way.
