Tagliatelle al Ragù egg tagliatelle with meat ragù, soffritto and tomato
Ribbons of egg pasta, meat ragù and soffritto: the real bolognese has had a recipe deposited at the Chamber of Commerce since 1982.
Read more →The province of Rimini is a recent invention: split off from Forlì in 1992, it has kept changing shape since. In 2009 seven towns in the upper Marecchia valley voted to leave the Marche region and join Emilia-Romagna; two more followed in 2021. This is the southernmost province of northern Italy, curled around the small Republic of San Marino, with some thirty kilometres of Adriatic beach in front and the Marecchia and Conca valleys rising behind it towards the Montefeltro highlands.
Rimini itself has the Tempio Malatestiano, the one building worth leaving the sand for. The sand is the rest of the story: Riccione and Cattolica have lived on seaside tourism for generations, Bellaria-Igea Marina at a quieter family pace. A few kilometres inland the mood changes at Santarcangelo di Romagna, and the road keeps climbing into Montefeltro.
