In 984 the marquis Manfredo I gave the brothers Alineo II and Anselmo the castle and lands of Cervere, with a wood of three hundred jugera. In 1018 Alineo's son Robaldo III founded a monastery here dedicated to Saint Theofredus and made it answer to a distant abbot, that of the abbey of the same name in the Velay, in the old kingdom of Aquitaine.
For its upkeep he assigned fifteen farms between Cervere, Marene and Caraglio, plus a mill near the village, a Piedmontese foundation answering to the Auvergne. The place lies in the plain close to the Stura di Demonte, and has given its name to a cultivar of leek grown here.
