Pinerolo was the city of cavalry: its military school, attended by officers from around the world, invented captain Caprilli's natural riding system, and the national Cavalry Museum keeps its saddles, standards and legends. Another legend inhabits local memory: the Man in the Iron Mask, the faceless prisoner of the French fortress, was held here in the seventeenth century.

The basilica of San Maurizio watches from its height over the roofs; the Gothic cathedral and porticoed streets compose a foothill drawing room. Galup has baked its low glazed panettone here since 1922: the Olympic valleys start at this door.
