Carbonara pasta with guanciale, egg, pecorino romano and black pepper
Guanciale, egg yolk, pecorino romano and black pepper: Rome's signature pasta comes from a recipe fought over between trattorias and army rations.
Read more →Viterbo is the only province of Lazio that borders Tuscany, and the map explains much of its character: Grosseto and Siena to the north, Umbria to the north-east, Rieti to the east, Rome to the south, the Tyrrhenian Sea to the west. Around 313,000 people live across its 60 municipalities, most of them in small towns; Viterbo itself, with some 63,000 residents, is by far the largest and the seat of the provincial administration.
The city keeps its medieval San Pellegrino quarter and the Palace of the Popes, where the longest conclave in Church history dragged on through the 1200s. The best-known sight beyond it is Civita di Bagnoregio, a village on a crumbling tuff spur reached on foot across a long bridge; Tarquinia has the painted Etruscan tombs cut into the rock, and Montefiascone looks down on Lake Bolsena.
