Bistecca alla Fiorentina T-bone cut of Chianina beef, grilled rare over embers
A T-bone cut from Chianina beef, grilled rare over embers with no seasoning at all: Florence's signature dish.
Read more →On a map the province of Pisa looks like an upside-down pistol: it begins on the alluvial plain of the Arno, in western Tuscany, and runs down to the Ligurian Sea. Its capital, the city of Pisa, was one of the real Mediterranean powers of the 12th and 13th centuries, built on ground the Etruscans had worked long before. Today the province counts 37 municipalities and more than 400,000 residents, hemmed in by Lucca, Florence, Siena, Grosseto and Livorno.
Almost everyone comes for Piazza dei Miracoli and the Leaning Tower, which is fair enough; the mistake is leaving the same afternoon. Pisa also keeps Tuttomondo, the mural Keith Haring painted here. Inland the distances stay short and the names are worth the detour: San Miniato, Volterra, Pontedera, San Giuliano Terme. That is where the province stops performing and starts behaving like somewhere people live.
