Tagliatelle al Ragù egg tagliatelle with meat ragù, soffritto and tomato
Ribbons of egg pasta, meat ragù and soffritto: the real bolognese has had a recipe deposited at the Chamber of Commerce since 1982.
Read more →Parma is the fourth province of Emilia-Romagna by population, and its territory runs on the diagonal: it begins on the bank of the Po, facing Cremona and Mantua, and ends on the passes that drop into Tuscan Lunigiana on one side and towards La Spezia and Genoa on the other. That span covers 44 municipalities and just over 427,000 residents, and the smallest of them counts fewer than 600 people.
The capital is a walking city, and its finest building is the Baptistery, octagonal and clad in pink marble, beside the cathedral. Outside town the province reads valley by valley: Langhirano is where Parma ham is cured, Salsomaggiore Terme grew up around its salt springs, Fidenza keeps a Romanesque cathedral on the old pilgrim road to Rome. Higher up there are woods and very small villages, up to the ridge that shuts off the sea.
