Carbonara pasta with guanciale, egg, pecorino romano and black pepper
Guanciale, egg yolk, pecorino romano and black pepper: Rome's signature pasta comes from a recipe fought over between trattorias and army rations.
Read more →Until 1926 much of this province was not part of Lazio at all. Cassino, the Valle di Comino and the district of Sora belonged to Terra di Lavoro, a province of the Kingdom of Naples. Frosinone was created by royal decree that year out of land taken from the provinces of Rome and Caserta: 91 towns filling the Liri and Garigliano valleys and the mountains along the Abruzzo and Molise borders, the area Italians call Ciociaria.
Anagni was a papal town: Boniface VIII was seized in his own palace here in 1303, and the cathedral crypt holds a fresco cycle worth the drive. Cassino lies below Montecassino, the abbey rebuilt after 1944. Alatri and Ferentino still stand behind their pre-Roman polygonal walls. Fiuggi has lived off its mineral springs for a century. Frosinone, the provincial capital, is a working town rather than a destination, but a practical base.
