Carbonara pasta with guanciale, egg, pecorino romano and black pepper
Guanciale, egg yolk, pecorino romano and black pepper: Rome's signature pasta comes from a recipe fought over between trattorias and army rations.
Read more →Rieti is the emptiest province in Lazio, and its capital makes a curious claim: a plaque in Piazza San Rufo marks the geographical centre of Italy, the umbilicus Italiae. The province counts 73 municipalities and just over 155,000 inhabitants, nearly 46,000 of them in Rieti itself and 97 in the smallest village. There is no coast here — only the Sabine hills facing Rome, the plain around the capital and the Apennines rising towards Abruzzo.
This is not a place for famous monuments, which is part of the appeal. The Sabina is a landscape of olive groves and hill villages above the Tiber valley — Fara in Sabina, Montopoli di Sabina, Magliano Sabina, Poggio Mirteto — and its oil has been pressed here for centuries. Cittaducale still shows the grid plan of a medieval new town, and east of Rieti, around Borgorose, the country turns to Apennine pasture.
