Carbonara pasta with guanciale, egg, pecorino romano and black pepper
Guanciale, egg yolk, pecorino romano and black pepper: Rome's signature pasta comes from a recipe fought over between trattorias and army rations.
Read more →The province of Rome was created in 1870, when the city became part of the Italian kingdom, and it shrank in the 1920s as land was carved off to form new provinces. What is left, 121 municipalities in the Lazio region, is still the most populous province in Italy: close to four million people, two thirds of them within Rome itself. The rest, from the hills south of the city to the Tyrrhenian coast, lives in its orbit.
A first trip writes itself: the Colosseum and the Roman Forum, the Pantheon, the Trevi Fountain, the Vatican Museums and the Sistine Chapel. A second one starts outside the walls. At Tivoli, east of the city, Villa d'Este stages water better than any other Italian garden, and Villa Adriana holds what is left of an emperor's country residence. On the coast, Civitavecchia is Rome's port; to the north, Bracciano sits on its lake.
