Risotto alla Milanese rice, saffron, beef marrow and butter, creamy and soft
Rice, saffron, beef marrow and butter: Milan's golden dish, tied by legend to a glassmaker of the Duomo in 1574.
Read more →Varese as a province is a twentieth-century invention: created by decree in 1927 out of towns that had belonged to Como and Milan. Four cities appear on its coat of arms, Varese, Busto Arsizio, Gallarate and Saronno, and the first two are almost identical in size. 138 municipalities and close to 872,000 residents sit between the Swiss border to the north and Milan to the south.
Varese itself and Saronno are the easiest bases if you are coming from Milan, while Busto Arsizio and Gallarate carry as much weight as the capital does. Samarate, a town of just over sixteen thousand, is home to the world's largest helicopter manufacturer, which tells you what kind of province this is. Mid-sized towns like Tradate and Somma Lombardo are worth a stop, because no single city dominates here.
