Risotto alla Milanese rice, saffron, beef marrow and butter, creamy and soft
Rice, saffron, beef marrow and butter: Milan's golden dish, tied by legend to a glassmaker of the Duomo in 1574.
Read more →Look at a map of Lombardy and Pavia is the odd one out: it borders Piedmont to the west, south-west and north-west, runs up against Emilia-Romagna towards Piacenza, and only meets Milan along its northern edge. The provincial capital shares the province's name. Together they cover 186 municipalities and around 535,000 people, spread very unevenly, with two towns above 60,000 residents at one end and villages of fewer than a hundred at the other.
The one place most visitors come for is the Certosa di Pavia, the monastery a few kilometres outside the capital, in the town that carries the same name. It would be a mistake to stop there. Vigevano is the province's second city and stands on its own rather than orbiting Pavia, while Voghera and Mortara anchor much of the life beyond the two largest towns.
